This shrimp cocktail recipe is so easy to make.

It’s a wonderful appetizer or you could make a large cocktail in a pretty dish to use as part of a buffet – maybe for a Superbowl party or other celebration.

Shrimp cocktail is often a starter in the UK for Christmas Day meals – except we call it ‘prawn cocktail’ – it’s something that as host, you can prepare beforehand, doesn’t need to be kept warm for serving, which makes life easier for the cook as you can concentrate on getting the ‘hot’ stuff ready, knowing that your starter is safely prepared and in the fridge.

You can use fresh or frozen shrimp (prawn) for this cocktail recipe.

If you’re using frozen, then sit them in a sieve whilst they defrost.

Pat the shrimp dry before adding to a bowl to make the cocktail sauce.

For 4 people, you will need around 8 oz (225g) 2 cups of defrosted shrimp (prawn)

Put them into a bowl and add 2 tablespoons of mayonnaise

Add one tablespoon of tomato puree to the shrimp/prawn and mayonnaise.

You can either mix the mayonnaise and tomato puree together or add to the same bowl as the shrimp.

Either way will work, but this way, only dirties one mixing bowl 😉

Very carefully, stir the ingredients together.

You need to make sure that all the shrimp are covered by the cocktail sauce.

Finely shred some lettuce.

I like to use a firm iceberg in this recipe but you could use any type you prefer.

Shred it finely and put it in the bottom of a serving dish

I like to use a glass dish to serve, but some people use cups or mugs which look quite charming.

Individual serving dishes look lovely – it’s an easy way of portion control if you’re catering for a crowd.

Pile the shrimp mixture on top.

Garnish with a lemon slice or wedge and a sprig of parsley.

You can serve this recipe with some brown bread and butter as an appetizer or it could be part of a buffet party.
